Way back when, Harold Dieterle was the winner of the very first season of Top Chef, but at this point NYC diners know him better for his two West Village gems Perilla and Kin Shop. On Monday, the adventurous Dieterle is set to open The Marrow, his largest project to date with business partner Alicia Nosenzo. The concept is completely different from his other two venues, which are New American and Thai, respectively. Here, the focus will be on contemporary German and Italian fare, paying homage to the chef's ethnic heritage.

You can expect a rotating selection of wood-grilled meats and dishes like pan-fried duck schnitzel with quark spaetzle. The wine list will feature over 400 options that focus on Germany, Austria and Italy. The corner space housed Paris Commune for a number of years, and it's Dieterle's first venue with a private dining room. The space that used to house the Commune's stand-alone wine bar will seat 20, and open in early 2013. With 2012 rapidly winding down, this promises to be one of the year's last big openings. Stay tuned for information here (99 Bank St.; 212-428-6000).
