The J. Parker, in addition to creating cocktails for Perennial Virant, Erin Hayes is returning her feet to the ground at La Sirena Clandestina. It was reported that Hayes will join current beverage director Justin Anderson in executing the Pisco, tequila and mezcal-focused cocktail menu – in tune with her South American-themed menu that debuted at The J. Parker.
While one Paul Virant property lost a bartender, another gained one. In the suburb of Western Springs, Vie announced its acquisition of Bill Anderson. Anderson formerly worked as a bartender at Sepia. His new menu includes seasonal drinks such as the Quincerac with quince infused Rittenhouse rye, North Shore's Sirène and Peychaud’s bitters.
One more suburb stole an urban beverage director. Jan Henrichsen of Bin 36 and Pastoral will take the beverage program at Found, recently opened in Evanston. According to Eater, Henrichsen will revamp the beer and wine lists to pair with Midwest-raised chef Nicole Pederson’s simple and locally-focused cuisine.
