Before you head over to Green City Mart this weekend, consider going to 2 Sparrows instead where executive chef Greg Ellis features a rotating array of vegetables from the Lincoln Park farmers market in a seasonal quiche. The light and airy custard is filled with combinations such as spinach, spring onion and cheddar; green garlic, arugula and pecorino; and kale, leek and goat cheese. Although the item is available year round, it only improves with the summer’s flavors.
