We’re far from vegetarians, so when our favorite dish at a restaurant is tofu, you know it’s something truly special. Danji, from chef Hooni Kim in Hell’s Kitchen, takes fresh tofu, rolls it in potato starch, fries it, and tops it all off with ginger, scallion, fried tempura crisps and hot pepper. It’s so simple, yet so flavorful mostly due to the way the smooth tofu and crunchy tempura batter meld together with each bite. (And if you just have to have some meat, you won’t be upset ordering the kimchi bacon spam paella—don’t forget the egg.)
