We’ve been seeing a lot more bone marrow on menus lately, and the newly opened sexy Spanish resto and wine bar in Brookline,
Barcelona, is no exception. Chef Steven Brand (formerly
Upstairs on the Square) roasts the beef bone with herbs – parsley, rosemary and thyme – and garlic, and finishes it off with lemon zest, which brightens the rich fat and adds a bit of balance, as well as caramelized garlic and parsley.
