Rex 1516 Loses Chef, Gains a Charity Cocktail

Dishes like maple-glazed Cornish hen will now be prepared by Justin Swain
In sad news, Regis Jansen is stepping down as chef of South Street West’s Rex 1516. The toque has battled Cystic Fibrosis since birth, and doctors recently told him the long hours and stress of running a successful restaurant kitchen were just too much for his health. However, before he left Jansen worked hard to train friend and sous-chef Justin Swain, who will be stepping up to execute the Southern-inspired menu.

To show thanks, Rex 1516 partnered with Art in the Age to create a special cocktail, from which 100% of the sales will be donated to nonprofit Manna, which has been supporting Jansen. From January 1-31, stop at the antique wood bar for a $10 Snappy Pamplemousse (Art in the Age Snap, Combier Pamplemousse Rose, St. Elizabeth Allspice Dram, orange juice) and help with the chef’s recovery.
