It's always shocking when a restaurant opens the day it says it will open. For months chef Josef Centeno has been working on opening Bar Ama, one of the more anticipated restaurants of the year, a new Tex-Mex spot just around the corner from Baco Mercat. Last time we saw him he was literally painting the bar; yes, with his own bare hands. It's a labor of love, though. Not only is Bar Ama is named after his great-grandmother, it's an ode to the food grew up eating with many dishes based on family recipes.

Expect to see things like fried puffy tacos (this Baco coca was sorta kinda inspired by that), polenta taquitos, Frito pies, wood-fired fajitas, roasted goat cabrito and mondongo soup. There's a full bar with a tequila and mezcal focus, plus beer and wine. As promised, the restaurant will open on Saturday, December 15. [via Daily Candy]
