Puritan & Company Opens Tonight in Brighton

Puritan & Company, Will Gilson's New American restaurant, is debuting tonight, November 30, earlier than the projected date of this coming Monday. The setting is that of an “urban farmhouse” - the wallpaper would easily fit in Gilson’s family home living room; there’s vintage artwork, a focus on communal seating and the host stand is a 1920’s gas stove found in the Herb Lyceum, his family’s farm in Groton, Mass. The restaurant seats just over 100.

The menu of American eats features a seasonal, creative twist, including snacks (hogs in duvets - pork sausage in herb mustard); starters (bone marrow gratin, cod brandade with brown bread and baked soy beans), house-cured charcuterie, salads, soups; and hearty fare such as lamb chops and lamb sausage with hay roasted carrots. Prices range from $6 for snacks to $30 for entrees. As for the drinks program, there’s a nicely edited wine list, craft beers and an emphasis on sherry.

The restaurant is housed in the former location of the Puritan Cake Company. Combined with Gilson’s lineage - he’s a thirteenth generation Mayflower descendant - the name Puritan & Co. honors his roots along with the history of the space. Gilson made a name for himself as chef/owner of Garden at the Cellar.

Puritan & Company is open daily for dinner beginning at 5 PM, and will be open Sunday through Thursday until 11 PM, Friday and Saturday until 2 AM.
