Nobu, the upmarket fish restaurant might be known mostly for its Japanese dishes and sushi but owner, Nobu Matsuhisa began his career at a small sushi restaurant in Lima and his love for the flavours of the country is evident on the menu. These Peruvian-style anti-cucho chicken skewers, for example, were marinated in a sauce made from chilli and rice vinegar, sprinkled with chopped chives and then served with a wedge of lime.
