We can't say we didn't see this one coming. In fact, we were at the Tap Room at the Langham in Pasadena recently and heard rumblings that the haute dining room The Royce would be closing, and Eater confirms and says a steakhouse will replace it. Chef David Feau will serve his last meal there on January 26.
The Royce is just a little more than two years old, having replaced the fairly dusty, staid Dining Room after Michael Voltaggio left. Before that, chef Craig Strong got himself a Michelin star serving refined seasonal cuisine (he's now at Studio in Laguna Beach) for several years there. And while Feau was lauded for his creative French-inspired California cuisine, the times dictate that something less fussy will probably do better on the historic hotel property. The still unnamed "contemporary steakhouse" is slated to open in late February. Good thing there are plenty of Pasadena restaurants to keep you sated.
